About Big Island Chef 

 

Personal Information

I grew up in the Midwest, between Milwaukee and Chicago where I attended high school, college, and culinary school. I had many aunts and uncles from my mothers family (Italian) who were professional chefs, and cooks. Around the holidays from October up to Christmas they would all meet at my aunty Ann's house and start the process of making all the fresh pastas and desserts for the coming Christmas. I would watch in amazement as they rolled out and cut pastas by hand. My grandfather made his own Chianti in wooden barrels in his basement. Perhaps that's were I found my love of food.

I worked in restaurants through high school and college, but I never thought of the culinary field as my calling until I went to school and started to develop my passion. It was like going back to those days when I would watch my aunts, uncles, and cousins produce some of the best food I've ever eaten. 

 

Arriving in Hawaii I was the opening general manger for a small restaurant at one of the Kona Coast Resorts in Keauhou. I spent time as  head waiter and part time chef at an Italian restaurant in Kona. I also spent 2 1/2 years at the Four Seasons Hualalai as the overnight chef. When I started doing  private work, I was a sous chef working with executive chef, Jeff Acol (one of the most talented chef's to come from Kona) at Amy Ferguson's O's Bistro here on the Big Island in Kona.
